Super Easy Marshmallow Frosting Recipe

Marshmallow frosting is the bomb! So, making it from scratch makes you a superhero in my books


200g caster sugar

2 egg whites (pasteurised)

80ml water

1 tbsp vanilla 

1/2 tsp white vinegar

pinch salt



  1. Add a pinch of salt to 2 egg whites and leave to sit for 30 minutes
  2. Add all the ingredients in a heatproof bowl and place over a pan of boiling water
  3. Making sure that the water doesn't touch the bowl
  4. Using an electric whisk, whip the mixture for 7-10 minutes until stiff peaks form
  5. Leave to cool before frosting your cake
