This is the cake sponge everyone needs in their life. Especially if you’re a decorator. There are so many things to keep track of when you decorate a cake so if you can make the sponge on autopilot your mind is free to focus on fondant. The ingredients are so easy, you’ll make this cake once and have them memorised by heart. It rises ridiculously well considering there’s no creaming or folding or sifting, I mean it, just mix and it’s good to go. Lastly, it’s scalable. Every time you add an egg simply add 2oz more of everything else and you can tailor this cake to be any size you need. If someone could just give it a cape, it really would be a superhero.
Ingredients
4oz self-raising flour
4oz butter
4oz sugar
2 eggs
3 tbsp boiling water
Method
Combine everything in a bowl and mix with an electric whisk until smooth but be careful not to overwork
Pour into a lined pan and bake in a pre-heated oven at 180C. Cooking times are as follows;
- Cupcakes – yields 6-10 – bake for 20-25 minutes
- 8-inch cake pan – yields one – bake for 30-35 minutes
- 9-inch cake pan - yields one – bake for 25-30 minutes *please note this one will be pretty thin
